COCINA ABIERTA’S TASTE CONQUERS CONDADO
Finally something new in Puerto Rico. It’s a few years already since I came to San Juan, nothing has changed really. The island is still economically challenged, corruption and weak politics do not help. Tourism is struggling……what happened to la Isla del Encanto!!! Such a beautiful island. Old San Juan, my favorite Caribbean colonial old town along with Cartagena and Santo Domingo, sin hablar de la Havana…..
The only exciting news is the arrival of some new and excellent restaurants…One of them without doubt is the Cocina Abierta, cocina escuela.
Restaurant Cocina Abierta opened the doors to their new establishment located at #58 Caribe St in Condado.
Chef and owner Martin Louzao created the restaurant’s new menu, composed of 30 small dishes divided into 5 acts. These acts aim to lead guests to follow a progressive order of flavors, where tastes develop from light earthy tones all the way to deep bold sumptuous dishes. They also elevate this culinary concept by suggesting 2 carefully selected wine glass pairings for each dish.
“The objective of creating a menu in this format is that our guests have the option of creating their own tasting, within all the options and this way they can have a unique gastronomical experience, where the fanning of flavors is broader than in any other menu you may find” explains Louzao.
My favorite, the PURPLE POTATO & OCTOPUS PERUVIAN CAUSA. A Peruvian Octopus ceviche loved into Purple Potato kind of Mille Feuilles with a glass of Albarino. Slightly spicy, colorful with amazing flavors. Great presentation.
Besides their elegant menu items, Cocina Abierta also has a lush wine list, with over 20 choices for wines by the glass, the wine list provides guests with the possibility of tasting lavish wines, outstanding labels from their carefully designed wine list.
We can find some Genepi DOLIN!!. DOLIN, a family owned Company since 1815, located in the heart of the French Alps in Chambery. DOLIN is also very well known for its Vermouth.
